분류체계
석죽목 명아주과에 속하는 관속식물이다. 밭에서 식용작물로 재배하는 한해살이풀 또는 두해살이풀로 키는 50cm가량이다. 원뿌리는 깊이 들어가고, 연분홍색, 육질이다. 줄기는 곧게 서고, 속이 비어 있으며, 연한 녹색이다. 잎은 어긋나기, 줄기 아랫부분의 잎은 긴 삼각형 또는 난형이고, 밑부분이 날개 모양으로 생겼으며, 잎자루는 위로 갈수록 짧아진다. 꽃은 5월에 수꽃과 암꽃이 따로 피며 서로 다른 개체에 달려 있어 암수딴그루다. 줄기 끝이나 잎겨드랑이에 모여 달리는 이삭꽃차례를 이루고, 수꽃은 꽃차례에 잎이 없다. 화피는 4장, 수술 4개이다. 암꽃은 꽃 밑에 화피 같은 작은꽃싸개잎이 있고, 암술대가 4개 있다. 열매는 수과, 꽃싸개잎에 싸이고, 2개의 가시가 있다. 어린잎을 나물 및 샐러드의 재료로 이용한다. 잎에서 노란색 염료를 추출하여 사용한다. 아시아 서부 원산으로 우리나라 전역 및 전 세계에서 재배한다.
