전통지식(문헌) 문헌명 전통지식(문헌)조사내용 번역문 용도 열람등급 해동역사 곤포는 지금 오로지 고려에서만 난다. 삼[麻]을 꼬듯이 새끼줄을 꼬고, 황흑색이며, 부드럽고 졸깃해서 먹을 수가 있다. (명의별록 주) 곤포는 신라에서 나는 것은 황흑색으로, 잎이 가늘다. 신라 사람들은 이것을 채취하여 꼬아서 새끼줄을 만든 다음, 배 위의 그늘에서 말려 중국으로 가지고 온다. (남해약보(南海藥譜)) 발해의 풍속에서 귀하게 여기는 것은 남해(南海)의 곤포이다. (신당서) 고려의 곤포로 국을 끓이는 법은 다음과 같다. 곤포 1근을 쌀뜨물[白米泔]에 담가서 하루 저녁을 묵혀 신맛을 씻어 내고, 물 1두(斗)를 넣어 끓여서 익힌다. 그런 다음 곤포를 3촌(寸)쯤 되는 길이로 잘라서 4, 5분(分)가량 걸쭉하게 하고, 이어 파[蔥白] 한 줌을 2촌(寸) 길이로 썰어 넣고서 다시 끓이되, 곤포가 문드러질 때까지 끓인다. 이어 소금, 초(酢), 된장[豉], 쌀가루[糝]를 넣고서 간을 맞춘 다음, 다시 국을 끓이는 법과 같이 끓여서 떫거나 시지 않게 한다. 여기에다가 생강, 귤피(橘皮), 후춧가루[椒末] 등을 넣어 간을 맞추면, 조밥이나 쌀밥과 먹기에 좋다.
