생물종 상세정보
분류체계
콩목 콩과에 속하는 관속식물이다. 모래땅에 자라는 한해살이풀이다. 높이 60cm쯤이다. 잎은 어긋나며 짝수 깃꼴겹잎이며 작은잎은 4장이고 도란형 또는 난형이다. 꽃은 잎겨드랑이에서 1개씩 나며 7~9월에 나비 모양의 노란색 꽃이 핀다. 짧은 씨방의 자루가 꽃이 진 뒤 잘게 자라 땅속으로 들어간다. 열매는 협과, 긴 타원형이며 두껍고 딱딱하며 겉에 그물 같은 맥이 있고 그 속에 1~3개의 씨가 들어 있으며 10월에 익는다. 씨는 타원형 또는 장타원형이고 씨껍질은 적갈색이며 배는 황백색이다. 남아메리카 원산으로 식용 또는 사료용으로 재배한다. 전통지식(문헌) 문헌명 전통지식(문헌)조사내용 번역문 용도 열람등급 농정회요 두부[造豆腐法] 한(漢) 회남왕(淮南王) 유안(劉安)이 처음 만들었다. : 일반적으로 검은콩 ‧ 노란콩 및 흰콩 ‧ 이두(泥豆) ‧ 완두․녹두 따위는 모두 두부를 만들 수 있다. 만드는 법은 다음과 같다. 콩을 물게 담가 맷돌에 갈고 걸러내어 찌끼를 버리고 불에 졸이다가 염로집(鹽鹵汁)이나 산반엽(山礬葉)이나 산장초(酸漿醋)로 앙금을 가라앉힌 뒤에 솥에 갈무리한다. 또 항아리에 넣어 석고(石膏)가루로 갈무리하기도 한다. 대체로 맛이 짜고 쓰고 시고 매운 두부를 모두 만들 수 있다. 두부를 다 만들고 그 겉에 단단하게 굳은 것을 걷어내어 말린 것을 두부피(豆腐皮)라고 하는데 반찬에 넣어 먹으면 맛이 기막히다. 특히 여름에는 사람의 땀방울이 끓는 탕 속에 떨어지는 것을 막아야 한다. 식용 비공개 입연기 바탕은 희고 맛은 지마(芝麻 호마(胡麻))와 같은데, 이것을 가루로 만들어 모든 국[羹]에 조미하면 맛이 제법 좋으니, 과일 중에 특이한 품종이라 하겠다. 식용 비공개 입연기 기타 비공개 특성정보 (0건)
