분류체계
백합목 백합과에 속하는 관속식물이다. 서아시아 이란 원산이며 비늘줄기를 먹기 위해 밭에서 재배하는 두해살이풀이다. 높이는 50~100cm이다. 비늘줄기는 편평한 원형 또는 원형이며, 지름은 10cm쯤이다. 겉 비늘줄기는 건조한 얇은 막질이며, 자갈색을 띤다. 속 비늘줄기는 여러 개가 겹쳐 층을 이루고 두꺼우며, 매운맛이 난다. 잎은 속이 빈 원통형이며, 꽃이 필 때 마른다. 꽃은 9월에 피는데 꽃줄기 끝에 여러 개가 모여 산형꽃차례를 이루며, 흰색이다. 꽃줄기는 원통형, 높이 50cm쯤이다. 화피는 6장, 피침형이고 수술은 6개이다. 우리나라 전역, 전 세계에서 재배한다. 부추속의 다른 식물들과 비교하여 꽃줄기 밑이 방추형이며, 지름이 10cm로 비교적 두껍다. 전초는 식용하며, 비늘줄기는 약용한다.
