우제목 멧돼지과에 속하는 잡식성 포유류이다. 몸통은 길이 113-150cm이고, 꼬리는 길이 10-23cm이다. 주둥이는 긴 원통형이다. 날카로운 송곳니가 있다. 새끼는 적갈색 털에 검은 무늬가 세로로 나 있다. 12-1월에 짝짓기를 하고, 5월에 7-13개체의 새끼를 낳는다. 활엽수가 우거진 산지에 서식하며, 바람이 없고 햇볕이 잘 드는 따뜻한 남향을 좋아한다. 전국에 서식하며, 유라시아 중부와 남부에 분포한다. [저작재산권자]

    농정회요 도저장(饀猪膓) 돼지창자를 깨끗이 씻는다. 우선 돼지 피를 어느 정도 헤아려 가져다가 참기름[眞油]과 콩나물[豆芽] ‧ 후추[胡椒] 등 재료를 골고루 섞은 다음 돼지 창자 속에 집어넣고 물이 새지 않도록 양쪽 끝을 단단히 묶은 다음 삶아 익힌다. 식기를 기다렸다가 납작하게 썰어서 초장에 찍어 먹는다. 돼지창자를 씻는데 사탕(砂糖)을 쓰면 누린내가 나지 않는다. 멧돼지를 불에 끄슬려 껍질을 벗기고 그 살을 삶거나 구우면 다 독특한 맛이 있다. 돼지고기를 삶아 편육을 썰 때는 크고 얇게 썰어야 한다. 겨울철에 만들어 먹는데 3치 정도 크기의 배추김치 줄기에 편육을 말아 싸서 초장을 찍어서 먹으면 아주 시원하고 맛있다. 그러나 가래가 더 생겨 성하게 되니 너무 많이 먹지 말아야 한다. 식용 비공개
